> I'm still trying to make almond flour bread with a good crumb; the loaves I've made so far taste good, but they aren't very fluffy. > I read that *xanthan gum* could help produce bread with a better crumb, and since I happened to find it at the Kemco store, I bought some to try it in an almond flour bread. > The result was a loaf that was a little fluffier than the first one I made with almond flour. >I’m getting a little closer each time to the bread I’m looking for. ------------------ #### Ingredientes ^{(Ingredients)} ------------------------------

* 200 g de harina de almendras. * 3 g de goma xantana. * 1/2 cucharadita de azúcar blanca. * 4 g de levadura seca. * 120 g de agua tibia. * 2 huevos. * 1 cucharadita de aceite de oliva. * 1/2 cucharadita de sal.

* 200 g almond flour. * 3 g xanthan gum. * 1/2 teaspoon white sugar. * 4 g dry yeast. * 120 g warm water. * 2 eggs. * 1 teaspoon olive oil. * 1/2 teaspoon salt.

------------------ #### Preparación ^{(How to make it)} ------------------------------ * Para este pan pensé en activar la levadura primero; todavía no logro que los panes sin gluten crezcan tanto como me gustaría, pero este paso me parece que ayudó a que creciera un poco más. Mezclé el agua tibia con la cucharadita de azúcar y la levadura seca. La dejé reposar unos diez minutos, solo hizo pocas burbujas. > For this bread, I decided to activate the yeast first; I still can't get gluten-free bread to rise as much as I'd like, but I think this step helped it rise a little more. Activating the yeast: I mixed the warm water with the teaspoon of sugar and the dry yeast. I let it sit for about ten minutes, but it only produced a few bubbles. ![1000638676.jpg](https://files.peakd.com/file/peakd-hive/eugelys/23wMRvHDvNeZDA68YcRhMVyzkHWcmpPVcjk9VXqm8yJZCxujXf4ozUCntzod3JJS3CxQA.jpg) ![1000638677.jpg](https://files.peakd.com/file/peakd-hive/eugelys/23wgFBHoDofK3fuTtPspCkXb3r2de7DLUCHkjabibW65efzH75zvf778rAEx7j1UWqsm1.jpg) ![1000638678.jpg](https://files.peakd.com/file/peakd-hive/eugelys/23xySmx8c6VpmcERty3ZKWQ3rDvYwutsUCB6aRBtqV8oVMvzLTLSjEEGUxjRMJBavFx3N.jpg) * Por otro lado, mezclé los ingredientes secos; es muy importante mezclar la goma xantana antes de añadir líquido, pues formaría grumos. Batí los huevos junto con el aceite de oliva e integré a los ingredientes secos. > Next, I mixed the dry ingredients; it's very important to mix in the xanthan gum before adding any liquid, otherwise it will form lumps. Beat the eggs together with the olive oil and fold them into the dry ingredients. ![1000638703.jpg](https://files.peakd.com/file/peakd-hive/eugelys/23w2nzKWB32DE6N7WCnB73XqJuCgkVz1iRQWkKapiKxWNYXFPT2AyicGGwhTDeXotVMAB.jpg) ![1000638680.jpg](https://files.peakd.com/file/peakd-hive/eugelys/23xKxUzfVjeLpVjrNT31wFjAj9UDnK2SoFvuVb7jmUeN9GApAm1HsLx7DfE8sDMHDr2Ry.jpg) ![1000638681.jpg](https://files.peakd.com/file/peakd-hive/eugelys/23xAVkupMZ6iZrhayPL2niHErLiQj8mnLPDcBXsoRDLeSw63oFsAzfJYHRmtJMswUtqCC.jpg) ![1000638685.jpg](https://files.peakd.com/file/peakd-hive/eugelys/23vsQkWTqSrrE72TDUYGKsPkhKXd2q8pnK5i9p86T6i3w5j7yp1CtJ8Hm9ayPd7u7xJXC.jpg) * Colocar la mezcla en un molde para hornear y dejar reposar durante treinta minutos. > Pour the mixture into a baking pan and let it rest for thirty minutes. ![1000638686.jpg](https://files.peakd.com/file/peakd-hive/eugelys/23tbwZjzYmi1gLXUn5b4LAbjAX9Q7c7EwPvpaJ8No9SBybNLTYDfdE8AHWiDnpyrpkbf5.jpg) * Llevar a horno precalentado a 180 grados centígrados durante cuarenta minutos. Recuerda que el tiempo de horneado depende de tu horno. Te recomiendo hacer la prueba del palillo y verificar el color dorado del pan. > Bake in a preheated oven at 180 degrees Celsius for forty minutes. Remember that baking time depends on your oven. I recommend doing the toothpick test and checking to see if the bread is golden brown. ![1000638687.jpg](https://files.peakd.com/file/peakd-hive/eugelys/23uFVvDi8TVaiy4BwHuVXNB1EkNhJkxPWgmPB7yoUZRqhNJZzfNHHw4Vy6bRESd9oDvxC.jpg) ![1000638704.jpg](https://files.peakd.com/file/peakd-hive/eugelys/23wqnwxadsQxoVxw1rPnS3zLzjDEBYjUu9zs1jbhJS1yNGTX5oB4vF2EToKUNfcD5R5Gp.jpg) **Este pan obtuvo una mejor esponjosidad, pero aún no llega a tener la miga que busco; me queda una tarea pendiente.* > *This bread was fluffier, but it still doesn't have the crumb I'm looking for; I still have some work to do.* **¡Espero que te guste esta receta, cocina fácil y con sabor**! **I hope you like it!** --------------------------------- ^{Photos: Samsung Galaxy A53 - Translated with DeepL - Portada hecha en Canva - Imágenes editadas en Canva.} --------------------------------------------------
